What's the most tasteful way to remix Paul Simon? Probably to keep the majority of the track in tact, which appears to be the angle that Flight Facilities have with this 1986 classic.
This rendition appears to have been in their mix for some time now, and the band suggests it works particularly well for a live set -- with an easy intro and outro for even the most amateur of DJs. I'm no DJ myself, but this one stands alone by itself pretty well.
