Why do we like this?

I've been sitting on this one for a while, now, saving it for the right moment to dust off and bust out.

To be fair to George and Bonobo, it's not that old a song -- it was released back in February as part of George Fitzgerald's new album All That Must Be. I won't say it's particularly groundbreaking, but it captures each of their styles quite effectively.
